For Immediate ReleaseDINING TO SUPPORT THE REVITALIZATION OF BC WILD SALMON STOCKS Donations from new cookbook by chefs of Aqua Riva, Salmon House & Horizons supports Pacific Salmon Foundation Vancouver, May 10, 2004 - The chefs of three of BC's premier fine dining restaurants have compiled their most delicious salmon recipes in support of efforts to help protect and rebuild BC's wild salmon population. Starting May 10, diners at Aqua Riva, the Salmon House and Horizons savouring the first run of BC wild salmon can make a donation to the Pacific Salmon Foundation during the restaurants' "Fresh and Wild" promotion and receive a free cookbook. Featured salmon entrees at the three restaurants will be available for $17.00 until the end of June. In partnership with the BC Salmon Marketing Council to promote Wild BC Salmon, each of the three chefs have given up some of their salmon making secrets with the latest by-donation charity cookbook. Proceeds from the sale of the cookbook will be directed to the Pacific Salmon Foundation (PSF). The PSF is a not-for-profit organization committed to protecting, conserving and rebuilding Pacific salmon populations through focused efforts such as habitat restoration and stock assessment. Funds raised from the sale of the cookbook will be directed towards a PSF approved project led by Coastal Environmental Restoration Society to complete the Tod Creek Fishway in Victoria. The construction of the Tod Creek Fishway will provide Coho Salmon a life saving passageway over the Butchart Garden dam and the potential to utilize ten kilometers of linear stream habitat. The cookbook features 30 BC wild salmon recipes of Dan Atkinson from The Salmon House, Mario Fortin from Aqua Riva and John Garrett of Horizons Restaurant. "You can drop by any one of our three restaurants, make a donation of any amount and support this unique charity that is making a difference for Pacific Salmon habitats and our overall environment," said Geoffrey Howes, Director of Operations of Toseki Entertainment, which operates The Salmon House, Aqua Riva and Horizons Restaurant. "We are pleased to be partnering with Aqua Riva, Salmon House and Horizons," said Paul Kariya, Director of the Pacific Salmon Foundation. "This helps support a joint effort of our foundation, the community and our ongoing efforts to restore Pacific wild salmon for generations to come." The cookbook is available starting today by donation until June 30 or while quantities last at the following locations.
