Panfried Salmon
with a Sundried Tomato Vinaigrette
4 - 6oz. Salmon Fillets
2 Tbsp. Olive Oil
Salt and Pepper
Place oil in sauté pan over medium/high heat.
Place salmon fillets in pan, sauté for 3 minutes on one side, turn over and sauté for a further two minutes.
Add salt and pepper to taste.
Place salmon on four separate plates and drizzle sundried tomato vinaigrette generously over top.
Sundried Tomato Vinaigrette
6 oz. Sundried Tomatoes
1 cup White Wine Vinegar
12 Shallots, finely diced
1 ½ cups White Wine
3 Tbsp. Fresh Lemon Juice
1 ½ Tbsp. Salt
1 Tbsp. Garlic, chopped
3 Tbsp. White Sugar
1 ½ Tbsp. Fresh Ground Pepper
3 ¾ cup Vegetable Oil
Soak sundried tomatoes in boiling water for two minutes and drain.
Place shallots, lemon juice, garlic, pepper, vinegar and white wine in a blender and puree.
Transfer to a bowl and whisk in remaining ingredients.
Serve with pan fried salmon.
